Strawberry sandwich ice cream with Holle Organic Spelt Biscuits

Ingredients (for 4 servings):

  • 250 g strawberries or other fruit
  • 500 ml strawberry ice cream
  • 150 g Holle Organic Spelt Biscuit (24 pieces)

Preparation

Clean strawberries wash and cut into slices. Cut strawberry ice cream into cookie size or shape into ice cream balls. For 12 sandwiches, ice or spread the bottom of 12 cookies. Top with strawberry slices and with remaining cookies, pressing down lightly.
Freeze sandwiches for about 3 hours.
